Mock Chicken Fried Rice
2 bags green giant riced cauliflower medley (200 cal)
1.5 containers Oscar meyer carving board chicken (360 cal) (or substitute with ~12 oz shredded chicken breast)
1 c All white egg white sub (125 cal)
2 tbsp lite la choy soy sauce (30 cal)
2 tbsp olive oil (240 cal)

*Place saute pan over medium heat and add olive oil and riced cauliflower. Once veggies are warmed through, cut chicken into small pieces add in along with egg whites. (I push the veggies and chicken to one side and then pour the eggs in to make sure they get cooked thoroughly). Add soy sauce and serve up! Note: this recipe is high in sodium, so make sure to keep your water intake up to balance it out.
